今天拿到一个礼包,里面有包汤料-瑶柱海鲜火锅上汤(soup base for seafood hotpot)。家里很少会用到这类汤料,但,看到包装上精美的海鲜照片,心想,不如找一天就用它,在家里做个海鲜火锅吧。

翻过背面,看了成分标签,打消了用它来做上汤的念头。
成分标签上,分量最多的,是排在最前面。这包汤料,排在首5名的,是水、盐、干虾、油、盐腌辣椒。
成份表上,干虾排名第三,干贝排名第六。。。排在第一第二的是水和盐。。。 |
奇怪,怎么这个汤包没有营养标示(nutrition facts)...如果有,我想,它的钠(sodium)含量应该很惊人吧。
接下来的增味剂,MonoSodium Glutamate, 就是味精(MSG)
Disodium 5-inosinate 和Disodium 5-Guanylate又是什么呢?
有的食品上面不写这些化学名词,而直接放它们的号码,也就是E631 和 E627。
这两种增味剂,有说是从动物或海鲜萃取,属于“天然”成分,但,它们不适合儿童和某些疾病患者,尤其是痛风和哮喘患者。我家有哮喘底子的人,还是少用为妙。

627 E627 | Disodium guanylate | Flavour enhancer. Isolated from sardines or yeast extract; not permitted in foods for infants and young children. Persons with gout, hyperactivity, asthmatics and aspirin sensitive's should avoid it. |
631 E631 | Disodium inosinate | May be prepared from meat or sardines; not permitted in foods for infants and young children. Gout sufferers avoid. It is found in instant noodles, potato chips and snacks, savoury rice, tinned vegetables, cured meats, packet soup. Asthmatic people should avoid inosinates. As inosinates are metabolised to purines, they should be avoided by people suffering from gout. Frequently contains MSG(621). |
